Random Dinner and “coming soon”


I had a delicious lunchbox dinner tonight at work, here it goes:


1 serving whole grain penne (I used Bella Terra Organic whole grain with flax seed), prepared
1 serving marinara (1/2 cup, but I thinned mine with 1/4 cup of water.  I used Newman’s own brand)
Dried Italian seasonings and oregano
Garlic Powder
Dried onion pieces/onion powder
1/2 cup cooked chickpeas (from a can or cooked from the bag)

Side dish (I used carrots and some home made blackbean hummus)

Directions (The night before):

Cook noodles according to package and put in a container that they only fill half way.  Put sauce and dried spices/garlic powder/onion powder/pepper in small container with chickpeas.  Overnight, the sauce will moisten the dried spices/herbs.  When you get to where you’re going, just pour the sauce/chickpeas into the noodles, shake container, and microwave for about 1 and a half minutes.  Enjoy!


I will be posting my boyfriend’s vegetarian buffalo pizza recipe (that you can make vegan) as well as a few other things!  Sorry it’s been so long, I’m back in school and very, very busy!

Also: keep in mind that World Vegetarian Day is October 1st!
