Hello ladies and gents,

I recently returned from a weekend trip to Vegas, sponsored by John Holdun.  I’ll soon be doing a blog post on Vegas+vegans. Also, tomorrow Courtney, Z and I will be having  pizza and movie night and I’ll blog it! But today I just wanted to share with you my breakfast/lunch:

Balsamic Tomato Bagel:

Ingredients: (Serves 1 or 2)

1 onion bagel (most are vegan, but check first)
1 tbsp vegan cream cheese
1 roma tomato, sliced
salt/pepper
balsamic vinegar

Directions:

Toast bagel.  Spread each side with half of the cream cheese, top both sides with several slices of tomato.  add salt and pepper to top, sprinkle with balsamic vinegar.  Enjoy!

Avocado and tomato toast:

1 deli flat bread, or just two slices of wheat bread
1/8 ripe, raw avocado, smashed
1 roma tomato, sliced
salt/pepper
1 tsp olive oil

Directions:

Toast deli flat/bread.  Spread with avocado, put tomato slices on.  Sprinkle with salt/pepper, then drizzle with olive oil.  You could add balsamic vinegar to this also.  Enjoy!
