Veganize it!

Seventeen magazine arrives every month at our house, even though my younger sister and I are past the age of seventeen (I know), but they have a fitness/food section that sometimes has good recipes in it.  Many times, these recipes are not vegan but can be easily veganized.  Veganization just involves replacing the non-vegan food with vegan food, and maybe improvising a little!  Examples:

They construct a spicy ham and cheese roll, ingredients: spinach or whole wheat wrap, 1 tbsp spicy mustard, 2 slices reduced-fat cheddar cheese, 3 slices low sodium ham, 1/2 cup shredded lettuce, 1/4 cup shredded cucumber, 1/4 cup shredded carrots, 2 tbsp diced tomatoes.

Here is my version! (Serves 1)

Ingredients:

1 whole wheat or spinach wrap
1 tbsp spicy mustard (guess who didn’t have spicy mustard?  So she subbed in regular mustard with red pepper flakes!)
1/4 cup Daiya cheddar
2 to 4 slices veggie ham (I use LightLife Smart Deli Ham)
1/4 cup shredded romaine lettuce or spinach
1/4 cup diced cucumber
1/4 cup shredded carrots
2 tbsp diced Roma tomato

Roll it all up and enjoy! I also think this would be great with the addition of a little avocado (probably like an 1/8 of a medium avo.  But then agian I LOVE avocado!)

Pre-rolling of course!
