Easy dinner idea: Shepherd’s pie

This is something I just do with random ingredients I have, but here are the basics:

Ingredients (serves 6-8)

1 bag veggie crumbles (you can also just pulse some veggie burgers in a food processor if you don’t have any)
Frozen vegetables (1 large bag, or as many as you want)
^ for this recipe, I use a frozen mix that has corn, peas, carrots, green beans
Several cups mashed potatoes (recipe to follow)
Nutritional Yeast (about a tablespoon)
Red wine vinegar
1 cup soymilk
Salt/pepper
1 packet beef stew seasoning (or any other vegan meat seasoning you want)
About a cup of chopped mushrooms (any kind you want)

Directions:

Preheat oven to 350.  Spray a baking pan with cooking spray.  Make mashed potatoes (take about 6 red or white potatoes, wash and peel them.  Boil until soft.  Drain.  Mash those potatoes with 1/2 cup soymilk and a tiny bit of margarine, salt, and pepper).  Set aside potatoes.  Heat cooking spray or oil and saute frozen vegetables, mushrooms, and crumbles until cooked through.  Add seasoning packet, pepper, and salt.  Add red wine vinegar.  Add a tiny bit of soymilk if it seems extremely thick.  Dump this mix into the pan.  Pour the other 1/2 cup of soymilk onto this mix.  Spread the mashed potatoes on top.  Sprinkle nutritional yeast (or breadcrumbs, soy cheese, etc) on top.  Top with pepper. Cook on 350 until the inside is bubbling and the potatoes are a little brown.
