Couscous Stir-fry


I usually make this at the end of the week with random veggies in the fridge, it’s delicious!


1 serving cooked couscous (cooked with garlic powder and salt/pepper in water)
4 medium radishes, sliced into half moons
1/8 of a red onion, thinly sliced
5 crimini mushrooms (or whatever mushrooms), quartered (or thinner)
1 red pepper, peeled and chopped
3/4 cup diced broccoli
2 tbsp diced daikon
1/2 cup canned black beans (you can rinse and drain or not)
low sodium soy sauce
garlic powder
onion powder


Cook couscous according to package directions and set aside.  Fry/saute’ (if you like yours crispy, make the oil hotter) all the vegetables, but NOT the beans together in a frying pan, stirring frequently.  Sprinkle with spices and soy sauce as you cook, to taste.  Once the vegetables are fully cooked, add the beans and allow them to heat through.  Put couscous in a bowl, top with some soy sauce, and mix vegetables in.  Enjoy!

    This is my favorite. I’m not a vegan but it is still totally delicious and filling!!! 😀
