A Random Salad Idea

I didn’t know what to have for “linner” today when I got home from work, so I threw some stuff in a bowl and came up with this:

Ingredients:

Salad:

1 cup mixed greens, whole leaves
50 g (or about 6 caps) baby bella mushrooms, quartered
30 g (1/8 of an onion) red onion, thin slices
2 small radishes, cut into half circle slices
1/2 roma tomato, thinly sliced
1/4 cucumber, thinly sliced
fresh ground black pepper

Dressing:

2 tbsp red wine vinegar
1 tsp Dijon mustard

Directions:

Layer vegetables in a large bowl, arrange cucumber and tomato slices on top.  Top with cracked black pepper.  Whisk red wine vinegar and mustard together, add a little black pepper.  Drizzle over salad.  Enjoy!

Serving Suggestions: Because it uses several of the same ingredients as The Most Delicious Sandwich I, I made it along with this sandwich today (I used the extra cucumber and tomato from the sandwich to top the salad).

Variations: This dressing could be pretty tangy, so 1 tbsp extra virgin olive oil would sweeten and fruit it up a bit, also maybe a pinch of sugar.

NOTE: Throughout this blog I will mention measurements in grams.  I will try to make a note as to what other measurement you could use.  But these little food scales are great:

    Beautiful shots of your meals. It really helps making the food when you have such detail photographs and instructions. Can’t wait to read more.
